Quick’n Easy Fried Rice

Here is a quick and easy fried rice recipe with frozen vegies. Not only is it a quick meal, its cheap and a great way to get the kids eating vegies.

Ingredients:
2 cups of rice
3 cups of water
1 cup of mixed frozen veges
2 eggs
some bacon (as much or as little as you like or you can use left over chicken or pork)
1 onion
soy sauce
oil (olive oil is healthiest I suppose)

Method:
1.Cook the rice as directed on the pack (absorption method is usually best – cook rice and water in a pot and stir occasionally, when it starts to boil turn the heat down so it simmers for 10 minutes, keep stirring now and then). Works best with cold rice however if you don’t have time just rinse rice under cold water and drain.

2.Cook the frozen veges in a pot.

3.Make a small omelette with the eggs and cut it up.

4.Put the oil in the frypan, cut up the onion and bacon and cook it until it starts to brown.

5.Add the rice, omelette and veges. Add soy sauce to taste.
