Corned beef with parsley sauce | Slow Cooker
Slow cooker recipes are incredibly quick and easy and corned beef is such a versatile meat. It can be enjoyed hot with vegetables or cold on a cold meat platter or sandwich.
What you’ll need:
1 piece of corned beef/silver-side to suit your needs.
2-3 large carrots, peeled and cut into 2-inch chunks
2 bay leaves
1/2 cup malt brown vinegar
1/4 cup brown sugar
few pepper corns
1 onion, sliced
6 whole cloves
zest and juice of an orange
Water (or beef/veg stock) to just cover the beef
parsley sauce
30g butter
¼ cup (35g) plain flour
2½ cups (625ml) milk
1/3 cup (40g) grated cheddar cheese
1/3 cup finely chopped fresh flat-leaf parsley
1 tablespoon mild mustard
Method:
Place the meat into the slow cooker.
Add all the spices and vegetables, juice , vinegar, sugar and water/stock.
Cover and cook on low 7-9 hours or according to the manufacturer’s recommendations for meat by weight.
Remove the meat from the liquid and allow to rest for 10 minutes before slicing.
Serve with mashed spuds, green veg and a white parsley sauce.
